30-year-old vineyard with chalky, barren gravel soil.
The Pinot Blanc grapes were harvested selectively by hand. The grapes were destemmed and lightly crushed with the feet; 2 days of maceration; manual punching down of the mash. Fermentation was spontaneous and uncooled. Only minimal sulphur was added during vinification. The Pinot Blanc HIPPO was bottled unfiltered.
