24-year-old vineyard with poor pebbly soil on the Kranawitzel vineyard.
The Pinot Noir grapes of the Pet Nat were harvested by hand and already selected in the vineyard. After whole bunch pressing, a few grapes were returned to the must, which started fermentation without yeast in a stainless steel tank. After the main fermentation, the unfiltered and unsulphurized "Sturm" (fermenting must) was filled into the sparkling wine bottle and sealed with a crown cork. The final fermentation took place in the bottle (without any additives). We then disgorged the Pet Nat in winter and closed it again with a crown cork.
