Vineyards that are on average 35 years old with poor gravel soil.
The grapes were harvested by hand and selected directly during the harvest. Each variety was vinified separately, but according to the same scheme: The grapes were destemmed and lightly crushed with the feet; 1 day of maceration. Fermentation was spontaneous and uncooled. The wines spent 6 months on the fine lees, were blended and the Naturbursch matured in stainless steel tanks until bottling.
