22 to 36-year-old vineyards with calcareous gravel soil and loamy subsoil.
The Welschriesling grapes were harvested by hand and selected directly during the harvest. The grapes were destemmed and lightly crushed with the feet; 1 day of maceration. Fermentation took place spontaneously and uncooled. The Welschriesling matured on the fine lees for 6 months. Only minimal sulphur was added during vinification. The Welschriesling OSTRICH was bottled unfiltered.
